Coconut Burfi In Watermelon Form

Ingredients

Serves : 4
  • 1 cups coconut,grated finely


  • 1/2 cups condensed milk


  • 1/4 tsp cardamom powder


  • 2 tbsp powdered sugar


  • 1/8 tsp red food colour


  • 1/8 tsp green food colour


  • 1 tbsp chocolate chips


  • 3 tbsp nova ghee

Directions

  • Heat a non stick pan and add the grated coconut and dry roast it on low-medium heat for 5 mins or till you see no sigh of moisture from the coconut. Do not let it burn. ( I have used fresh coconut here so roasting time will be lesser if you are using desiccated coconut)
  • Lower the heat and add the condensed milk. Stir and mix well together for about 5 mins.
  • Add the Cardamon powder, powdered sugar and 2 tbsps of ghee. Mix well and cook stirring it continously till it forms dough like consistency. Remove from heat.
  • Divide it into ¼ and ¾ portions. Add green colour in the ¼ portion and mix well. Add red colour in the ¾ portion and mix well till they are incorporated nicely.
  • Grease the plate or bowl with the remaining ghee.
  • Now place the green colour coconut mixture in the sides of the plate/bowl and press them gently and flatten them. Now place the red coconut mixture over the green mixture and gently press and flatten them. Place the chocolate chips randomly over the red mixture to give an effect of watermelon seeds.
  • Let it cool down completely, slice and serve.
